as someone from Québec I have to ask you, what word(s) do you use instead of “soulier” then? Individual words for the specific type of shoe? Because “soulier” as a generic word for all kinds of shoes seems like a pretty useful word to me.

Chaussure seems to replace soulier as a general word for shoe. Soulier is older and kind of awkward and doesnt refer to modern shoes
